WGPAT Meeting 2018

WGPAT organised its annual workshop in Ayr, Scotland from 27 to 29 September 2018.

The Working Group on Prolamin Analysis and Toxicity (WGPAT) is an international group of doctors, nutritionists, food experts and chemists, including Olivier Tranquet, researcher of the Allergy team.
Their mission is to conduct and coordinate research on the analysis of gluten in foods and the evaluation of clinical and nutritional aspects of celiac disease.
WGPAT members cooperate with industry who produce gluten-free foods as well as with producers of test systems for gluten analysis in food.

Grégory Bouchaud, researcher in our team was invited to present his work on the impact of deamidated gliadins in wheat food allergy. This work shows that deamidated gluten causes an influx of dendritic cells (cDC2) which induces a response of lymphocytes (Th2 and Th17) responsible for inflammation.
