The cider industry must adapt to the evolution of cultivation practices, the reduction of inputs, and climate change. Faced with the new variabilities linked to these changes, cider processing faces new challenges.

The Resilicidre Joint Technology Unit is focused on these issues to deliver results (knowledge, technical itineraries, tools) allowing operators in the sector to better respond to the issues they are and will be facing in the future.

The UMT, located in Le Rheu, started in January 2022 for five years. It follows two other collaborative contracts (UMT NovaCidre and Nova2Cidre) between the Institut Français des Productions Cidricoles (IFPC) and the BIA unit.

The 2022-2026 project of the UMT Résilicidre focuses on issues related to the adaptation of cider processing to new variabilities linked to changes in cultivation practices, climate change and low-input processing. These questions are segmented into two components:

• Characterizing the impact of changes in cultural practices and climate change on fruit quality and contributing to the adaptation of cultivation and harvesting methods
• Adapting cider processing to the variability of the raw material and to consumer expectations (organoleptic and without inputs).
